This cocktail is a thing of beauty. Let me explain. My husband and I often disagree on drinks. I like them fruity, bubbly, sweet, and devoid of any actual alcohol taste. He likes strong flavors like whiskey, bourbon, and gin, without much in the way of additives.

When I created this recipe, I was worried he would find it too sweet or that it would be too strong for me. Boy, was I wrong. The blood orange soda and thyme simple syrup are fruity and herbal , but you can still taste the smokey bourbon flavor. Needless to say, we were both pleased and drank it down quickly.

This is a perfect date night cocktail! Its citrus-y, bubbly nature pairs great with a rich steak, fish, or practically any other meal.

And don't you just love the His and Hers highball glasses I used for this cocktail? We received them for our wedding in 2016, but you can purchase them for yourself here. They are simple and classic, made by Kate Spade, and dishwasher safe. What could be better?

This cocktail is pretty simple to put together, but it does require just a tad of pre-planning. The recipe calls for thyme simple syrup. Its super easy to make, but does need to cool for a bit before you put it in your cocktail.

What is a simple syrup? Its a mixture that is 1 part sugar to 1 part water. That's it. You put them in a pan over low heat and cook until the sugar melts. You can make any type of simple syrup by adding in other flavors. Herbs are a great option - lavender, mint, chamomile, and in this case time. Berries work well too!. Add them while the sugar is melting. Then you turn off the burn and allow your concoction to cool on the stove. Once cooled, strain your syrup and use!

Thyme simple syrup progress.
Thyme simple syrup from Start > Middle > End. All the sugar has dissolved and the syrup is clear.

Aside from the simple syrup, the rest of the ingredients you can get at just about any grocery store. For the blood orange soda, I purchased mine at Sprouts Farmers Market. Its a pink color which really gives this cocktail its romantic flare.

Now lets get down to it. Here's the recipe:

Make the cocktails:

  1. Add ice to the highball glasses.

  2. Divide the Bourbon and Triple Sec in half and add them to the two glasses.

  3. Next, divide the 3 oz of simple syrup in half and add to the glasses.

  5. The alcohol will sit at the bottom of the glasses. Give them a gentle stir, being careful not to stir out all the carbonation.
